Greetings! It’s been an unusual couple of weeks in our family. As you may recall, we had plans to be on vacation all last week. It didn’t exactly work out as planned. I’ll share the details below. On a topic related only because I’ve been making this ahead of time for RV meals, I’ve gotten into making my own spaghetti sauce lately. No better time than when the tomatoes are ripening, and there are lots of local fresh veggies begging to be used. I dice up anything that needs to be used from our veggie bin - onions, tomatoes, bell peppers, and maybe a jalapeño, sauté them all, put about 2/3 of them in the blender, mix the resulting sauce back into the diced veggies, and then add a can of tomato sauce if needed. It seems to depend on what kinds of tomatoes you have and how ripe they are. The results are delicious!
